“I started selling in 2010. Back then, I was thinking about what to offer at Rahtawu tourism. I wanted something different from the usual chicken dishes. So, I took the initiative to serve entog,” Ngatri said.
Choosing Muscovy duck requires meticulous attention to the preparation process. The meat has a texture distinct from chicken and must be processed carefully to avoid toughness and remove its gamey odor. Consequently, the blend of spices and the cooking technique have been prioritized since the business opened.
Ngatri remains directly involved in operations, overseeing the kitchen staff and providing instructions on seasoning and preparation to ensure flavor consistency.
Abdul Hamid, a longtime cook at the eatery, handles the preparation of the rica-rica entog. According to Hamid, the cooking process cannot be rushed, as the spices require sufficient time to properly permeate the meat.

"The key is in the seasoning. We use a variety of spices and cook the meat a little longer to ensure the flavors penetrate deep inside," Hamid explained.
The process begins by cutting the Muscovy duck meat, which is then boiled for 30 to 40 minutes over a wood fire. The boiling process includes aromatics such as turmeric, galangal, lemongrass, and bay leaves.


These ingredients are used in the initial stage to help neutralize the gamey odor of the duck meat. After boiling, the meat moves to the final stage: preparing the rica-rica.
The seasoning blend consists of shallots, garlic, galangal, ginger, lemongrass, and lime leaves. Once the aromatics are prepared, the meat is cooked further until the spices are fully incorporated. The final rica-rica preparation takes approximately 15 minutes.

Using a wood-fired stove for boiling is a signature cooking technique at the eatery. Once the entire process is complete, the meat is served in a rich, spiced broth.

Zaidi, a visitor from Demak Regency, traveled to Rahtawu after seeing the spicy duck (rica-rica entog) on social media. His curiosity prompted him to visit the village to sample the dish firsthand.
"I was initially curious after seeing it on social media, so I wanted to try it and finally decided to come here to order the rica-rica entog. It tastes delicious; the spices are very pronounced and the meat is tender, which is impressive since it is duck," Zaidi said.

According to Zaidi, the texture of the meat was a highlight, as was the robust blend of spices used in the preparation.
Price is another factor for visitors. At Rp30,000 per portion, the rica-rica entog is a viable dining option for tourists exploring the Rahtawu area.
